All of our bread is naturally leavened with wild-caught sourdough starter. No commercial yeast or “sourdough flavour” is used.
In general, our bread is composed of three ingredients: flour, water, and salt, with added ingredients such as seeds, oils, produce, etc. We source organic, unmodified white (unbleached) flour from Meuniere Milanaise in Saint Jean-sur-Richelieu, Quebec, and whole grains grown on small farms in Ontario and milled by K2 Milling in Bradford, Ontario.
Sourdough bread takes three days to completion. Due to this extended process, orders must be submitted at least one day before pickup. Day-of orders cannot be guaranteed to be filled. Please specify the quantity of loaves you’d like.
If you would like to order more than four loaves at a time, order with at least three days notice.
Daily Bread - August 2025
Tuesdays / Red Fife - 40% red fife flour and 60% unmodified winter wheat flour boule. Red fife is a heritage grain with earthy, spicy flavours.
Wednesdays / Seeded Wheat - 20% red fife loaf with added sesame, poppy, flax, and sunflower seeds. The crust is rolled in a layer of sesame and poppy seeds for maximum crunch. A Fifth Chute favourite.
Thursdays / Sandwich Loaf - this 100% organic winter wheat pan loaf is softened with butter and baked in a pan for the classic feel of your favourite white bread, but with all the benefits that come along with sourdough and quality ingredients.
Fridays / Honey and Flax - 20% spelt loaf sweetened with honey and peppered with flax seeds. Baked in traditional loaf shape ideal for pb&h sammies or morning toast.
Saturdays / A CELEBRATION OF CORN SEASON - we just love corn season. We couldn’t pick one corn loaf to feature this month so we’ll be making a different loaf every Saturday that highlights this sunshiney grain (vegetable?) in a different way. August 23 will be Mexican street corn, where we add charred sweet corn, fresh cilantro, crumbly feta, and lots of lime zest to our country loaf. This is a tear-apart-and-eat-it-as-is sort of loaf…but also shines aside a nice tomato salad or spicy soup.
Every Day / Country Loaf - 10% red fife flour - an all around crowd pleaser!
Weekend Bread Specials
August 1/2: Dill Pickle
Our sandwich loaf made with pickle brine, some really garlicky dills, and lots of fresh dill from our favourite farmers’ gardens. A booster for grilled cheese, BLT, or egg sammies.
August 8/9: Sweet Peach Swirl
I ate my first Ontario peach of the year yesterday and shed a happy tear. We’ll cook down some of those into a rich butter and swirl it into a soft, buttery, cinnamony dough for a slice of summer’s bliss.
August 15/16: Walnut Loaf
A timeless classic - our country loaf loaded with toasty walnuts, ready for any cheese you throw at it, the more pungent the better.
August 22/23: Cheddar and Chive
Soft sandwich loaf with plenty of sharp cheddar and homegrown chives. A classic pairing!
August 29/30: Deconstructed Pesto and Tomato
Pesto, broken down into its core components: basil, parmesan, and pine nuts, with added dried tomatoes (because you know I planted too many).
Baked Goods
All of our baked goods are prepared from scratch in house. We require one day’s notice for all of these items. Please order in quantities of 6 or 12; please specify the quantity that you’d like.

Scones - cherry and almond / peach
Muffins (vegan) - carrot / red currant and sumac
